Weekly Menu Plan



Monday - Chicken enchiladas. Leftover chicken from the Santa Fe chicken I had on the menu for last Monday, but didn't actually make until Saturday. Put the leftover shredded chicken mixture into tortillas, cover with salsa, bake & enjoy.

Tuesday - Cowboy chili. I'm not sure what makes this cowboy chili versus regular chili.

Wednesday - Leftover soup from Sunday (potato, cheese & broccoli).

Thursday - Chicken & veggie kabobs.

Friday - Chicken fried rice (using leftovers from Thursday).

Update: Cowboy Chili = pork sausage, onion, kidney beans, chili-style diced tomatoes, tomato sauce, Mexicorn, chili powder & pepper. So apparently cowboys eat pork.

@mrs. taft - No way - you're not too detailed in yours. Mine would just be boring if I listed the other meals:

Breakfast: Cereal and tea
Lunch: Leftovers or a sandwich if there are no leftovers
Afternoon snack: Whatever fruit is ripe

My big shake-up to the above routine is that on the weekend I don't have tea, instead I have my beloved Dr. Pepper.

@kristi - I have been waiting very impatiently for cooler weather so I can start making soups and chilis again. And do more baking!

@alissa - updated the post itself after finding the recipe. It seems like a pretty basic chili recipe honestly other than being made with sausage rather than ground beef like I usually do.

Great use of leftovers! I work during the day so after two days in the fridge, leftover dinner becomes today's hot lunch :)
